OLIVE OIL
Our olive trees grow in calcareous soil and receive an abundance of sunshine, little rain, and dry north winds. The trees thrive in these elements to produce world-class olives. We mill our olives within hours of handpicking to preserve the distinct flavors and nutrients. Our Olio Nuovo, fresh oil, is naturally cloudy and has a grassy and peppery flavor profile. You will experience a slight, peppery sensation in the back of your throat from the high polyphenol levels. Polyphenols impart nutritional value to the oil. We suggest that you drizzle over pasta, bread, soup, and any of your favorite foods.
